Oluf Pedersen Kofoed was first a "Købmand" (Merchant) and "Rådmand (Alderman) in Rønne. He was first married first to Margrethe Sigvardsdatter in 1608, with whom he had 7 children, 5 of whom died young. His second marriage on October 19, 1623 was to Giertrud Lauridsdatter, the daughter of Laurids Giertsen, an alderman in Ystad. After which he moved to Ystad in the Danish province of Skåne, as we find him as mayor of Ystad from 1624 until his death in 1636. Oluf and Giertrud had 8 children, 4 of whom died young. His son Sivert, from his first marriage, would also become mayor of Ystad; he owned 3 "Fri Vornedegårde" (Free Copyhold Farms) on Bornholm, namely: Ågård, 2' Vdg. Pedersker, Ågård, 2' Vdg. Nylars, and Heslegård, 2' Vdg. Olsker.
